Courgette & Pesto Soup

Serves: 6
(Kosher for Passover)
 
Ingredients (Soup):
8 Courgettes (quartered)
1 tbsp. Butter
1 Onion (peeled & finely chopped)
3 Dorot Crushed Garlic Cubes
1.5  ltr. Water or Vegetable Stock
Salt & Pepper
¼ tsp Nutmeg
 
Ingredients (Pesto):
½ cup Olive Oil
1 cup Pine Nuts
4 Dorot Pasta Herb Mix Cubes
1 tbsp. Parmesan Cheese
Salt & Pepper
 
Preparation:
1. In a medium sized pan brown the onion in a pan with the butter.
2. Add the courgettes and the Dorot garlic cubes.
3. Add the water, season with salt & pepper and the nutmeg.
4. Bring to the boil and cook on a low heat for approximately 40 minutes.
5. Blend the soup in a food processor until smooth, check the seasoning and return to the heat.
6. To prepare the pesto, blend all the ingredients together in a food processor or using a hand-held blender until thoroughly mixed.
7. Pour the soup into dishes and pour the pesto gently on top and serve.
